This famous street food from india is full of all flavors ~ sweet & sour from Date & Tamarind Chutney, Spicy from Red Garlic Chutney and delicious crunch from fresh Pomegranate seeds and Masala Peanuts and Cashews!
In a pan, add Oil or Ghee, asafoetida, grated ginger, and Dabeli Masala; sauté for a minute. Add the boiled and mashed potatoes along with 1/4 cup of water (or as needed to prevent dryness). Cook on medium heat until the water evaporates.
Lay this mixture in a tray and create layers by adding Masala Peanuts and cashews, grapes, chopped cilantro, chopped onions, pomegranates, sev, and some more cilantro.
To assemble Dabeli: Apply both Dates and Tamarind Chutney and Red Garlic Chutney one by one on a bun. Stuff the bun with the Dabeli mixture. Add butter into a skillet and toast the bun on both sides until golden brown. Roll the prepared Dabeli buns into Sev and Pomegranates. Serve with prepared chutneys and enjoy.
