This traditional Gujarati Fafda recipe is perfect for those living outside India, allowing you to make this festive snack from scratch for your loved ones, especially around Dussehra.
1. Take a mixing bowl and add Besan, Salt, Asafoetida, Papadiyo Kharo & Ajmo/Ajwain(Carom Seeds), then mix everything well.
2. Now add 4 tablespoons of oil and mix.
3. Add water only 2 tablespoons at a time to bind a stiff dough.
4. Give the dough a 5 minutes rest! ~ NO MORE THAN 5 MINS REST ~ this is very important.
5. Now take a small portion of dough and knead it well ~ the dough will get much lighter in color and texture! (Kneading is very important to give the perfect shape to Fafda).
6. Take a small ball of dough and flatten it. Using the end of the center part of your palm, stretch it on a non-sticky surface by applying generous pressure (I always use a wooden chopping board) and give the Fafda a shape! Now run a knife through it right away to take the Fafda off the surface. Fry on low to medium heat until it is light golden and turns crisp!
