I wanted to make colorful puri using all natural veggie color and here I am sharing it with you all! Make it fun project involving kids since this is so perfect for family to come together and make Diwali memories more special
Mix all purpose flour, salt, dry roasted crushed black pepper corns and cumin seeds, half oil and half melted ghee (add enough until dough holds shape), and asafetida well. Divide the dough into three equal portions.
For the first portion, add turmeric powder and water as needed to bind a stiff dough. For the second part, grate beetroots, squeeze and strain all the juice, then mix it with water or use as is to bind a stiff dough. For the third part, use strained spinach puree to bind a stiff dough.
Add a little oil to each dough ball, rub all over, and keep covered. Let it rest for 10 minutes.
In a small bowl, add 2 tbsp rice flour and 3 to 4 tbsp melted ghee and mix to form a paste.
Roll out each of the three colored doughs as thin as possible, one by one. Spread the prepared rice flour and ghee mixture on top of each rolled dough. Now, layer the rolled doughs on top of each other and make a log shape by rolling it tightly.
Cut the log into desired sizes and transfer them into a bowl to keep covered. Roll each piece into puris and transfer them into a bowl, keeping them covered. Repeat the process until all puris are rolled.
Heat oil and fry puris on low to medium heat until crisp on both sides. Transfer onto a kitchen paper towel. Let them cool down completely and then transfer into an airtight container. Enjoy.
