Easy & perfect to impress your loved ones this Diwali! These traditional Indian shortbread cookies are made with flour, gram flour, semolina, ghee, and sugar, flavored with thandai masala or cardamom, then baked until golden.
1. Preheat the oven to 325 Fahrenheit or 160 Celsius degrees.
2. In a mixing bowl add Ghee and Sugar and whisk till it changes color and becomes fluffy (around 70 strokes).
3. Now add Thandai Masala (Optional) ~ (you can add only Ilaichi Powder too). Now add all dry ingredients ~ sieve Flour and baking soda.
4. Mix well by hand and check (for enough ghee Moyan) whether dough holds a shape before kneading!
5. In starting dough will be crumbly but it will come together. If it does not then add 1 tsp of milk at a time and knead a stiff dough.
6. Please do not Overknead.
7. Now make equal sized balls and put them on prepared baking sheet with parchment paper. Flatten a ball using palms. Create a thumbprint in the middle and add chopped Almonds and pistachios.
8. Now bake in the oven at 325F or 160C in the oven until golden brown on both sides.
9. Once done let it cool down and enjoy.
