Quick Aloo Gobi Paneer Paratha

1. Steam cauliflower and potatoes, then mash them.
2. Add paneer and mix well.
3. Add all the spices (Coriander, Turmeric, Red Chili, Garam Masala) along with salt, lemon juice, grated ginger garlic, and chopped chilies.
4. Mix well, then add Kasuri Methi and Kothmir.
5. Spread this delicious stuffing evenly on a paratha.
6. Heat a non-stick skillet and add oil or ghee.
7. Place the paratha with the stuffing part down. Constantly move it so it doesn't stick to the bottom. Once it turns golden brown, flip it and let the other side get crunchy golden brown.
8. Cut into desired size pieces. You can add grated cheese or more grated paneer on top.
9. Serve hot or pack in a lunch box along with green chutney or ketchup.
