A recipe for crunchy Dalvada, perfect for rainy days, enjoyed with fried chillies, onions, and chai. This recipe emphasizes achieving a firm, grainy batter for maximum crunch.
1. Wash and soak Dal for 4-5 hrs.
2. Drain dal, remove all excess Moong dal skin you see (as much as you can) and grind it in a Food processor or regular mixer. *Make sure not to add any water ~ Important to make Vadas Crunchy. The Dalwada Batter should be firm and grainy.
3. Remove the mixture into a mixing bowl.
Note: When you are ready to make Dalvada, take batter in small portions as seen in my video. When you are ready to make vada, add Salt to taste, Asafoetida, Cumin Seeds, Baking Soda, Chaat Masala & beat it well with a spoon or spatula till it becomes light & soft batter.
4. Heat the oil for frying. Once hot enough, drop medium-sized balls into the oil with your hand or spoon and fry them until all sides become golden brown.
5. Remove Vadas & try to drain excess oil & transfer Vadas on absorbent paper.
Lastly, Enjoy with your choice of sides or as is! DM with questions you may have about the recipe!
