A traditional Indian crispy snack (sev) made with chickpea flour and a vibrant green spinach puree, deep-fried to perfection. Enjoy this savory treat as a snack or accompaniment.
1. Add Spinach and Water to a blending jar and blend until smooth to make a purée.
2. In a mixing bowl, combine Besan/Chickpea Flour and Salt. You may add turmeric to taste if desired.
3. Add the Spinach Purée to the flour mixture and mix well. Break any lumps with a spoon and knead to form a soft dough.
4. Grease a Sev Mould and its Disk with Oil.
5. Heat oil in a frying pan (fill about 3/4 of the pan, never the entire pan, as the batter will bubble up). Once the oil is hot, add 2-3 tablespoons of hot oil into the Sev batter before adding the batter to the Sev Press.
6. Fill the Sev Press with the prepared batter and press the Sev directly into the hot oil.
7. Fry on both sides for approximately 2-3 minutes. Avoid over-frying, which can turn the Sev brown and diminish its green color.
8. Drain any excess oil and transfer the fried Sev to a kitchen towel.
9. Allow it to cool completely before storing it in an airtight container. Enjoy!
