A traditional Gujarati sweet made from whole wheat flour, ghee, and jaggery, often garnished with almonds. It's a comforting and favorite snack or dessert.
Add 3/4 cup of ghee to a pan and let it melt. Once melted, add whole wheat flour and stir constantly. Gradually add the remaining 1/4 cup of ghee little by little after adding the flour to prevent lumps. Continue stirring constantly until the mixture turns golden brown (it will get lighter as it cooks). Once it's golden brown, turn off the stove but do not stop stirring immediately. Add the grated jaggery and mix well. While the mixture is still hot, carefully transfer it onto a greased pan and spread it evenly using the base of a small bowl or spatula. Cut into desired diamond shapes while it is still warm (it will be difficult to cut into perfect shapes if it cools down). Garnish with almond silvers or serve as is. You can enjoy it warm or once cooled down. Store in an airtight container.
Note: Ensure you turn off the stove before adding jaggery, or your Sukhdi will turn into a hard-to-chew texture.
